A recent article in Saveur magazine struck a chord with me and I wanted to share a bit of it with you today. Erez Komarovsky, a well known baker from Isreal, hit the nail on the head when he talked about recipes. They serve a purpose – to guide you to the creation of a dish. But following recipes all of the time leads to sameness, and a somewhat boring existence. Truth be told, I haven’t followed recipes for years. I cook my own way. It keeps it fun for me, and the experience for me and the people I’m feeding changes each time. Some people need strict guidelines when they cook, and that’s fine. But I don’t feel the need to adhere to rules when it comes to food. Cook free or die, I say.
