interesting post. I do agree that sometimes bloggers have, and do over-photograph everything. I also agree that Ludo sees food in a very different way. I've heard that his food at Bastide back in the day was some of the best cooking anyone has ever done in LA. I wholly support Chef Ludo and hope that he finds a venue with a bit of permanence, though in one sense, he truly is an artist, roving around from gallery to gallery showing his work.

Hi Phil!! I just read mylastbites take on the evening at Royal/T. Wow! Sounds like a wonderful experience. The food, gallery setting, your interactions with Ludo...... What a full spectrum, complete sensory experience!! Interesting point you share about the "critic's/eater's" who do not cook. Yes, odd indeed. I too like interact and get my hands dirty before I feel the need to comment on something as important as food. Happy New Year :) Still in Grand Cayman.....looooonng trip back to the OC tomorrow!

Thank you, Jo! I was so close to asking if I could include your picture of the fried chicken dish, but I had to stay on course and not include any pictures of the food. If there was a dish that stood out that evening, the brined, boneless fried chicken w/polenta and mole was it.

I also failed to mention that the crispy confit of pork belly was served with a really smoky rich burnt eggplant puree with plantains, and a coconut thai chili emulsion that I wanted to go swimming in.

Thanks again, Jo. And thanks for introducing us to Ludo. Best dining experience of the year for me, with The Bazaar a close second.

Arnold, thank you for your comments. One of the things I appreciate most about you and your blog is the fact that you are an accomplished cook yourself. And yes, it does speak volumes for your appreciation of the food you eat when you dine at restaurants. I just read your post on the hand torched rib roast and I swear to you I thought it was perhaps the best looking roast I've seen anyone cook at home or otherwise.

Thanks again, and Happy New Year!

Great review and insights. I've got a Ludo Bites 3.0 review in my head that I don't know will see the light of day because I've got all this other stuff to write about, but it was going to go in this direction. :)

But this is my favorite quote:

"Spending most every evening eating at various restaurants does not make you qualified to be a culinary analyst. It makes you an eater – nothing more. Some education is in order, and perhaps that education starts in the kitchen."

I'm not the greatest cook in the world, but the fact that I actually do cook makes me appreciate the work that goes into creating even the simplest dishes more than someone who only experiences food as a paying customer.

"If Ludo’s ahi sashimi with sushi rice ice cream and soy sauce gellee was Mount Kilimanjaro, his fried chicken was Everest. It was a master stroke of technique and planning"

LOVE IT!
